All the fillings are enclosed inside the soft and tender crust, making these pizzas perfect for nights on-the-go, or, when you need to perk up pizza night at your house.

Ingredients
- 3 cups Bisquick™ Original Pancake & Baking Mix, plus more for dusting
- 2/3 cup very warm water (120°F to 130°F)
- 2 tablespoons olive oil
- 1/2 cup tomato pasta or marinara sauce
- 1 cup shredded cooked chicken
- 1/3 cup chopped green bell pepper
- 1/2 cup canned pineapple tidbits (from 8-oz can), drained
- 3/4 cup shredded Monterey Jack cheese (3 oz)
Instructions

Step1Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray.

Step2In medium bowl, stir together Bisquick mix, water and oil until moistened. Let stand 15 minutes.

Step3Knead dough slightly to form ball. Divide dough into 8 equal pieces. On surface lightly dusted with additional Bisquick mix, roll each dough piece with rolling pin to 6-inch round about 1/8 inch thick.

Step4In small bowl, stir together pasta sauce, chicken and bell pepper. Spoon 1 heaping tablespoon chicken mixture on each dough round. Top each with 1 tablespoon pineapple and 1 tablespoon of the cheese. Fold dough over; seal edge with fork. Place on cookie sheet.

Step5Bake 12 to 18 minutes or until golden brown. Sprinkle pizza pockets evenly with remaining 1/4 cup cheese. Bake 1 to 2 minutes longer or until cheese is melted.
