These Easy Gluten-Free Cinnamon Roll Bites are the perfect treat when you're craving cinnamon rolls but don't want the fuss of rolling and rising! The bites are made with Gluten-Free Bisquick™ Baking Mix, making them a delicious option for the gluten-sensitive.

Bisquick™ Gluten Free Pancake & Baking Mix: The perfect gluten-free blend for making these cinnamon-roll inspired bites.

Brown Sugar and Cinnamon: Instead of the usual white sugar, cinnamon gets mixed with brown sugar for a richer flavor.

Melted Butter: Half of the butter in this recipe is mixed right into the dough. Then, the dough balls are dipped into the remaining butter before coating in cinnamon sugar.

Cream Cheese: Use very soft cream cheese so it’s easy to mix with the powdered sugar to make the icing. If it is too firm, microwave for 10 seconds and stir. Repeat if needed.

Other Ingredients You’ll Need: Whole milk, eggs, and vanilla.

1. Mix the Dough

Mix up the dough and let it sit for a minute or two to give the dry ingredients a chance to start absorbing the liquids. While this is happening, it’s a great time to mix up the cinnamon sugar.

2. Scoop, Roll, and Dip!

Scoop the dough into rounded tablespoon-sized portions and gently roll into balls. Then, gently dip in melted butter and roll in the cinnamon and brown sugar mixture.

3. Bake the Bites

Once the coated dough balls are in the pie plate, pour some heavy cream over the top for a little extra richness, and bake until golden and fragrant.

4. Add the Icing and Enjoy!

Finally, drizzle the icing generously over the top of the bites and enjoy! Any extra icing can, and definitely should, be used for dipping!

These quick and easy cinnamon bites are best enjoyed warm from the oven the day they are made. Refrigerator and freezer storage are not recommended as the dough will dry out.

Ingredients

Dough

Topping

  • 1/4 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup heavy cream

Icing

  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1 cup powdered sugar

Instructions

  • Step 
    1

    Heat oven to 350°F. Grease a 9-inch pie plate or 9-inch round cake pan with butter.

    In a large bowl, mix all Dough ingredients until blended. Let the dough rest for about 5 minutes to absorb some liquid and firm up slightly.

    Meanwhile, in a small bowl, place 1/4 cup melted butter; set aside. In a medium bowl, mix the brown sugar and cinnamon until blended; set aside.

    Scoop dough into rounded tablespoon portions and place on a parchment paper-lined baking sheet.

    Roll the dough portions into balls. Roll the balls in the melted butter and then roll in the cinnamon mixture. Place the dough balls close together in the baking dish.

    Sprinkle any remaining cinnamon sugar mixture over the top of the bites. Drizzle the heavy cream over the bites.

    Bake about 25 minutes, or until puffed, golden, and cooked through.

    Meanwhile, in a medium bowl, beat the softened cream cheese and powdered sugar until smooth. Drizzle the icing over the hot bites. Cool 10 minutes before serving.
